Alpha acids are the main source of bitterness in beer. Longer boil times will result in the isomerization of more alpha acids, leading to increased bitterness.

Beta acids are the component of hop resins that contribute volatile aromatics and flavor properties. Beta acids do not contribute bitterness.

Alpha to Beta Ratio

The ratio of alpha to beta acids dictates the degree to which bitterness fades during aging. 1:1 ratios are common in aroma varieties.

Low-cohumulone hops arguably impart a smoother bitterness; high-cohumulone hops add a sharper bitterness to the final beer.

These highly volatile oils are quickly boiled off but contribute flavor and aroma when added very late in the boil or during fermentation.
